Deconstructed wonton soup

Classic flavours of wonton soup without the fuss of preparing dumplings.

Method

  1. In a large bowl, combine mince, spring onions, garlic, soy sauce, sesame oil, ginger, pepper and cornstarch. Mix until well combined. 
  2. Form the mixture into small meatballs and set aside. 
  3. In a large pot, bring the stock, sliced ginger, spring onions and carrots to a boil. 
  4. Gently add the meatballs to the pot and cook for about 10 to 15 minutes, until they're cooked through and float to the surface. 
  5. Add the bok choy and wonton wrappers. Let them cook for two to three minutes until tender. 
  6. Season the soup with the soy sauce and sesame oil. 
  7. Ladle the soup into bowls and garnish with sliced spring onions, fresh coriander, and a drizzle of chilli oil if desired.

    garlic, crushed
  • 1 tsp
    soy sauce, low sodium
  • 1 tbsp
    sesame oil

    grated ginger

  • 1 tsp
    cornstrach
  • Broth
  • 8 cups
    reduced salt chicken stock
  • 2 cm 
    piece of ginger, thinly sliced
  • spring onions, cut into 2 cm pieces
  • medium carrots, peeled, julienned or thinly sliced
  • 1 cup
    sliced bok choy
  • 8 - 10 
    wonton wrappers , cut into strips
  • 2 tsp
    soy sauce
  • 1 tbsp
    sesame oil

  • spring onions , thinly sliced
