Fennel and apple slaw

A fresh, crunchy and flavoursome coleslaw recipe that goes well with a wide range of meals.

Method

  1. In a large bowl mix together the fennel, spring onions, apple and carrot
  2. In a separate bowl mix together the lemon juice, yoghurt and mayonnaise to make the dressing
  3. Pour the dressing over the salad and mix gently to combine

  • carrot, finely sliced
  • 1 tbsp
    lemon juice
  • 3 tbsp
    unsweetened yoghurt
  • 2 tbsp
    mayonnaise
