Grilled fish wrap with pineapple and tomato salsa

Method

  1. Pre-heat the grill in oven
  2. Place tomatoes, capsicum, pineapple, spring onion, coriander, lemon juice and oil in a large bowl and refrigerate until ready to serve
  3. Place fish fillets on a baking tray and place under a hot grill, turn once and continue to grill until the fish is cooked through
  4. Place each wrap on a plate, divide the lettuce among them, top with grilled fish and pineapple and tomato salsa
  5. Roll up and serve
