Halloween lychee eyes

Are you looking for something healthy to serve this Halloween? Give these lychee and blueberry eyeballs a try. Frightening but delicious. Can be used as a ‘trick’ or a ‘treat’.

Method

  1. Drain the lychees
  2. Place one blueberry in each lychee
  3. Place in a glass or jar and pour over cranberry juice
  4. Serve dead cold

Tip

If you use frozen berries, then, for food safety reason, they need to be cooked before using.

Choose unsweetened fruit juice if available.
