Pineapple salsa

This is a great salsa to serve with grilled fish, seafood or pork. It’s also perfect as a BBQ side dish.

Method:

  1. Mix all ingredients together and keep refrigerated until ready to serve

Tips:

  • Fresh pineapple works best in this recipe, but you can use canned as well.
  • For a bit of spice add some chopped fresh chilli.
  • 2 cups
    finely chopped fresh pineapple
  • ¼ cup
    finely chopped red onion
  • 1 cup
    finely chopped capsicum
  • ½  cup
    chopped fresh coriander or mint
  • 1 tbsp
    minced fresh ginger
  • 2 tbsp
    lemon or lime juice
