Rice and bean salad

Looking for a rice and bean salad? Rice and beans go together so well we just had to make this recipe. It's fresh, filling and full of flavour.

Method

  1. Rinse the rice under cold running water
  2. Combine rice and water and cook in a saucepan with lid 
  3. Bring water to the boil then turn down to low
  4. Once water is below the level of the rice, turn the heat off and leave covered for 10 minutes
  5. Remove from heat and allow to cool
  6. When rice is cool, mix with remaining ingredients in a large bowl
  7. Serve immediately or cover and refrigerate.

Tip

Use barley instead of rice. Use 1 cup barley with 2 ½ cups water and cook same way.

  • can kidney beans, drained and rinsed
  • can corn kernels, drained and rinsed
  • 1/2 cup
    chopped coriander
  • cucumber, de-seeded and diced
  • 3 tbsp
    white vinegar
  • 2 tbsp
    oil
