Roast vegetable and meatball pizza

Try this pizza loaded with luscious roasted vegetables, it’s so good.

Method:

  1. Preheat oven to 225°C 
  2. Place courgettes, eggplant and capsicum in a large roasting dish and mix with oil 
  3. Roast for approximately 20 minutes or until softened and beginning to brown, then remove from oven 
  4. Place pizza bases on baking trays and evenly spread tomato puree over the top 
  5. Spread roasted vegetables over the tomato puree 
  6. Place balls of mince on top of the vegetables 
  7. Sprinkle cheese over the top 
  8. Bake for approximately 15 minutes or until golden brown 
  9. Remove from oven and serve 

Tips:

  • For something a little fancier, you can make the meatballs out of this mixture: Grilled beef kofta 
  • Any roast vegetables will work, use whatever you have available 
  • If you don’t have the time to roast vegetables you can top the pizzas with finely chopped raw capsicum, courgette, mushroom or red onion. 
  • You can also make your own pizza bases or use pita bread
