Grilled beef kofta

Here's a healthy mince recipe for you. These delicious grilled kofta will be a hit with adults and kids alike. Have them with pita bread or on rice with a salad.

Method

  1. Place mince, egg, bread crumbs, carrots, onion, parsley and tomato sauce into a bowl and mix together until combined, using clean hands
  2. Soak 20 wooden skewers in a shallow bowl of water for 10 minutes. Heat a grill oven to medium heat.
  3. Use clean hands to mould about two tablespoons of beef mixture around a wooden skewer into a kofta shaped sausage. Form each end of the sausage into a point to help secure it to the skewer.
  4. Place in a baking dish. Repeat with remaining beef mixture and skewers.
  5. Brush the kofta with a little oil and grill, turning carefully once, for 5-8 minutes or until browned on all sides and no longer pink in the middle.
  6. Place wrap on an oven tray, put in the oven to warm through.
  7. Remove wrap and place on serving plates. Top with lettuce, tomato, kofta skewer and cottage cheese.
