Seafood tray bake

Method

  1. Preheat the oven to 180 °C fan bake. 
  2. Use a large knife to hasselback the baby potatoes by cutting incisions in each potato, making sure you don’t cut through to the base, keeping the cuts as close together as possible. 
  3. Toss the potatoes in a tablespoon of oil and season with black pepper and roast in a large baking tray for 25 minutes.
  4. Cut each corn cob into four pieces and add to the roasting tray, toss in the oil and return to the oven for 7 mins.
  5. Butterfly the prawns by cutting a line down the back of each one, through the shell from the base of the head to the top of the tail remove the vein.
  6. Rinse and scrub the mussels under cold water, remove the beard and stringy bits. 
  7. Mix together the remaining oil, parsley, paprika, garlic and lemon wedges. Add the seafood to the pan and toss everything together. 
  8. Season well and return to the oven for 10 mins. Scatter some parsley over the top and serve.

Consider adding some firm fish or pieces of salmon.
