Stir-fried rice

A quick and easy vegetarian recipe.

Method

  1. Rinse the rice under cold running water
  2. Combine rice and water and cook in a saucepan with lid or rice cooker
  3. For the pot method - bring water to the boil then turn down to low
  4. Once water is below the level of the rice, turn the heat off and leave covered for 10 minutes
  5. Heat a wok or large frying pan
  6. Add the oil
  7. Add vegetables along with the garlic and stir-fry until nearly cooked
  8. Lightly beat the eggs
  9. Add beaten egg and cook until lightly scrambled
  10. Add cooked rice and heat through
  11. Add soy sauce and spring onions and mix through.
