Summer sardine salad

Method

  1. Place leaves, cucumber, onion and parsley on a plate
  2. Top with sardines
  3. Mix capers, lemon juice, oil and mustard and drizzle over the top of the salad to serve.

Tips

  • Any canned fish will work for this salad
  • For a quick meal, prepare the vegetables and dressing ahead of time and combine just before eating

    100g can sardine in spring water (drained)
  • 1 tsp
    capers
  • 1 tbsp

    mustard
