Beef with black bean sauce

A super tasty and healthy stir-fry recipe

Method

Sauce

  1. Heat first measure of oil in a wok or large frying pan.
  2. Add fermented black beans, garlic and ginger and sautee briefly.
  3. Add oyster sauce, water, soy sauce, rice wine, brown sugar, sesame oil and vinegar.
  4. Bring to a boil.
  5. Mix cornflour with a little water to form a paste.
  6. Gradually stir cornflour mixture into sauce until it thickens.
  7. Remove from heat and reserve sauce for later.

Stir-fry

  1. Heat second measure of oil in wok or large frying pan.
  2. Add sliced beef and brown all over.
  3. Remove beef from the wok and set aside.
  4. Add capsicum, onion, beans, spring onion, shiitake mushrooms and carrots to wok and stir-fry until cooked.
  5. Add beef and sauce back to vegetables in the wok and heat through.
  6. Remove from heat and serve.

Tip

Many of the ingredients in this dish are available at most supermarkets, some specialty Asian ingredients will be found in Asian food supply shops.
