Marinated chicken thighs

This can be cooked on the BBQ or in the oven.

Method

  1. Place the chicken in a plastic bag
  2. Combine garlic, ginger, juice and soy sauce and add to the chicken
  3. Place the bag in a dish and refrigerate for 2 hours, turning the bag occassionally
  4. Preheat the oven to 180°C
  5. Remove chicken from marinade and place in a baking dish
  6. Place a lemon slice on each thigh
  7. Bake in preheated oven for oven for 25 - 30 minutes or until the chicken in thoroughly cooked
  8. Garnish with the thyme sprigs
  9. Serve with roasted vine tomatoes

    fresh ginger, minced
  • 1/4 cup
    orange juice
  • 1 tsp
    soy sauce reduced-fat
  • lemon, sliced
