Method
- Prepare the masala by placing all ingredients except the potatoes,in a food processor and adding 2 Tbsp water if necessary
- Heat the oil in a pan and add the masala. Fry over low heat for about 20 minutes. Remove from the heat and leave to cool for 15 minutes
- Preheat oven to 160°C. Roughly chop the potatoes and place in a baking dish, add masala and coat
- Place in an oven and bake for about 20 minutes until soft in middle when pierced with a knife
- Remove from oven and serve sprinkled with coriander
