Scrambled tofu toast toppers

Tofu gently spiced with cumin and smoked paprika served on hearty whole grain bread.

Method

  1. Heat the oil in a frying pan over a medium heat and gently fry the onion for 8 -10 mins or until golden brown and sticky. Stir in the garlic, turmeric, cumin and paprika and cook for 1 min.
  2. Mash the tofu in a bowl with a fork, keeping some pieces chunky. Add to the pan and fry for 3 mins. 
  3. Add the tomatoes, cooking for 5 mins more or until they begin to soften. Fold the parsley through the mixture. 

Tips

Serve with Asian edamame dip. Alternatively, try these.

Whipped cottage cheese with strawberries and mint 
Roast 1 cup of strawberries with lemon zest, thyme leaves and a drizzle of honey, at 180°C for 12–15 minutes. Set aside to cool slightly. Whip half a cup of cottage cheese with lemon zest and freshly ground black pepper until smooth. Assemble by spreading the cottage cheese generously over toasted wholemeal bread. Then top with warm roasted strawberries and garnish with chopped mint. Enjoy.

Caramelised pear with blue cheese and rocket
Caramelise a pear by heating a drizzle of olive oil in a pan over medium heat. Add thinly sliced pear and cook for 2–3 minutes per side until golden. Remove from heat and set aside. Scatter slices of blue cheese over warm, toasted bread. Top with warm caramelised pear slices. Garnish with a handful of rocket or salad greens. Season to taste.
