Vegetable bake

This healthy vegetable bake recipe is a warming and tasty way to serve your vegetables.

Method

  1. Pre-heat oven to 180°C
  2. In a large baking dish, layer vegetables with the kumara first followed by the pumpkin, spinach, courgette and tomatoes on top
  3. Mix the miso paste with the water and pour over the vegetables
  4. Sprinkle the grated cheese over the vegetables
  5. Cover with tin foil
  6. Bake for approximately 30 minutes with the tin foil on
  7. Remove the tin foil and bake for a further 15 minutes to brown the top.
